Pork Chopsuey with Quail Eggs (Filipino Style)

Here’s how to cook the Filipino Style Pork Chopsuey with Quail Eggs…

Ingredients:

  • 1/2 kg pork, sliced about 1 – 1 1/2 inches
  • 10-12 pcs quail eggs (itlog ng pugo), boiled
  • 2 – 3 tbsp cooking oil
  • 5 cloves of garlic
  • 1 medium onion, slice into 6 wedges
  • 1/2 red bell pepper, sliced diagonally about 1/2 inch
  • 1 cup water
  • 1 tbsp oyster sauce
  • Salt and pepper
  • 1/2 cabbage, quartered
  • 1 medium carrot, sliced
  • 1/2 to 1 cup of cauliflower
  • 1/2 to 1 cup of snow peas (chicharo) or baguio beans (alternative)
  • 1 can of baby corn (optional)
  • 1 tbsp magic sarap seasoning (optional)
  • 2 tsp cornstarch diluted in 1/4 cup of water

Procedure:

  1. Saute the garlic and onion
  2. Add pork and red bell pepper, cook for 1 – 2 minutes
  3. Add 1 cup water and 1 tbsp oyster sauce
  4. Add salt and pepper
  5. Mix, then cover and bring to boil
  6. Add cabbage, carrots, cauliflower, snow peas/baguio beans and baby corn
  7. Add 1 tbsp magic sarap seasoning
  8. Put Salt and pepper to taste
  9. Mix, then cover and simmer for about 5 minutes until vegetables are half cooked
  10. Add quail eggs (itlog ng pugo)
  11. Add diluted cornstarch mixture into the pot and mix well.
  12. Simmer for about a minute
  13. Serve hot and ENJOY! 🙂
